Well, you can always dump (filtered) netstat output to a file,
adding your own timestamps, and then process it as you wish sometime
after the fact.

Whenever I'm trying to find a tool to monitor/inspect network
traffic, I always start here:

It's a bit impenetrable (and somewhat crufty), but it also contains
links to lots of very useful tools.
